Hungarian chilled cherry soup
Get it while it cold. This cherry soup is the perfect way to cool down on a hot summer's day.
- 500 gr cherries pitted
- 100 gr sugar
- 2 tsp cinnamon
- 0,5 litre water
- 1,5 tsp powdered vanilla
- 300 ml whipping cream
- 1 pinch of salt
- 1-2 tbsp cornstarch
- 1 tsp lime juice
Pit the cherries and blend with sugar and cinnamon. Let it sit for about 30 minutes.
Add water, salt and vanilla and bring to a boil.
Add the whipping cream and lime juice and let it simmer for about 15 minutes.
Add the cornstarch and stir while the soup thickens. If it's too thick add more water or cream.
Chill and eat when completely chilled.
